This is quick and easy. Good as a main dish, side dish, or lunch. It could be altered to use more fresh vegetables, of course.
Yield: 4 servings (“servings-ish” to be completely accurate)
2 cups dry pasta
5 cups water
Add water to pan and heat on high to a boil. Add pasta. Heat on medium for 8-12 minutes or until soft. Drain and mix with vegetable sauce (below).
1 cup frozen peas
4oz fresh mushroom, chopped
1 tbsp butter
1/2 tsp salt
1/2 tsp black pepper
1/4 cup shredded Swiss cheese
In a frying pan, set heat to medium. Add peas, mushrooms, butter, and salt. Stir often for 6-8 minutes, until butter is melted and peas are soft and warm. Mix with pasta. Top with Swiss and serve warm.
