Yummy, yummy, yummy!

This isn’t so much as a recipe as a review of a mix, but I am counting it. For the last 11 days either Big Boy, myself, Baby Boy, or all three of us have been ill. It greatly reduces any “umph” I have for cooking.

If you don’t know, beignets are sinful little bits of deliciousness that go great with a cafe au lait. They are also good on any random night that you have to make something that is more involved than unwrapping the plastic and throwing it in the oven. It is surprisingly little work for fried dough.

Yield: 16 doughnuts (using 1/2 of mix recommended  on box)

2 cups beignet mix

1 cup water

1/4 cup flour

vegetable oil (enough to fill pan 1/4 – 1/2 of an inch)

Heat oil in frying pan to 370° (it is hot enough when water flicked off your finger into the oil sizzles). Mix flour and water in a medium bowl with a spoon until just mixed. Put mixture onto flour on flat surface. Roll to 1/4″ thickness and slice into rectangles. Place in oil and fry until lightly browned on each side.

I use Cafe Du Monde mix. It’s the best. This is a good recipe to do with kids, as well. Big Boy was able to help with everything except the frying part.
