I wasn’t planning on blogging this, but my sister did a photo montage so I felt obliged.
I also wasn’t planning on blogging this because I am not a skilled omelet preparer. We had messy omelets. This video shows someone using a much larger spatula than I did.
Yield: 5 omelets
2 tbsp butter
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup chopped asparagus, steamed
1/2 cup sliced mushrooms
1/2 cup diced ham, fully cooked
In a medium frying pan, heat ingredients on medium. Stir often for 2-3 minutes. Reduce to low heat.
10 eggs
1 1/4 cups milk
5 tbsp butter
1/2 cup crumbled Gouda
In a small bowl, prepare two eggs and 1/4 cup of milk by whipping with a fork. In a medium-small frying pan, add butter and use medium heat. Add egg mixture. On one half of the pan add vegetable mixture. Sprinkle 1 tbsp Gouda on top of vegetables. Heat for 2-3 minutes or until bottom half of egg mixture is firm. Flip half of egg mixture that does not have vegetables over the top of the vegetable half (like a pita or calzone). Heat on medium for an additional 1-2 minutes or until egg is cooked through. Serve warm.
These were very yummy and very filling. I think it was the Gouda and ham that put it over the top.
