Kandy Kane Krispy Treats

Rice cereal treats are always good. I was bored and had some peppermint extract that I hadn’t used yet, so these delicious twists on a classic were born.

Yield: A whole lot of fluff

5 cups marshmallows

3 tbsp butter

2 tbsp milk

6 cups crispy rice cereal

1/2 tsp vanilla

1/2 tsp peppermint extract

Grease a 9×9″ or 9″x13″ baking dish (larger dish will make thinner bars). Melt butter in a medium saucepan. Add milk and marshmallows. Heat on medium-low and stir until melted. Do not boil. Pour half of mixture into a separate medium sized bowl. Add vanilla to one marshmallow mixture and peppermint to the other marshmallow mixture. Add 3 cups rice cereal to each bowl and stir until well coated. Press one rice and marshmallow mixture into the baking dish. Press second rice and marshmallow mixture into baking dish on top of first layer. Cool for 1 hour.

I did two layers of flavor because I thought that the peppermint would be too strong on its own. It worked out well. It was kind of like an Andie’s Candy without the chocolate and crispy…I’d like to try them again (when I have more time and patience), but to roll out the treats into candy cane shapes.
