Chicken 'n Dumplins

Why, oh why, oh why do I keep trying to make things with whole wheat flour? This was ok, but not fantastic. The biscuits were a little tough, but edible.

Yield: 4+ servings

2 chicken breasts, fully cooked, diced or pulled apart

1 cup water

1/2 tsp celery seed

17 oz chicken broth

1/4 tsp salt

1/4 tsp California seasoned pepper (alt: black pepper)

1/4 tsp ground white pepper

16 oz mixed frozen vegetables

2 tsp parsley flakes

Bring water and broth to a boil. Add remaining ingredients. Return to a boil, stir occasionally.  After second boil, mix together biscuits.

2/3 cup milk

1 cup wheat flour

1 cup pancake mix (alt: Bisquick)

Blend together flour and milk. Reduce heat on chicken mixture to low-medium. Drop dough on top of chicken mixture one heaping spoonful at a time. Heat uncovered for 10 minutes. Cover and heat for 10 minutes or until biscuits are done.

Don’t overcook your biscuits! I don’t know if mine were tough because I let them heat too long while covered or because of adding the wheat flour. It was apparently also bland – so I’m told. I’m sure it would also be better with fresh vegetables instead of frozen.
