That reminds me. I watched Julie & Julia for the first time last night. I knew the basic concept of the movie, but had no idea that Julie was a blogger. Mr. Ali and I kept giving each other sideways glances and laughing throughout the movie because of the parallels in my life. However, it is highly unlikely I will ever debone anything.

Despite living in the southern U.S. for 12 years, I never attempted a pecan pie. It may have just been too hot to bake. I was inspired by my good friend at JenSpends.com to try one after she was going on about her mother’s fantastic pecan pie at Thanksgiving. Also, it is Mr. Ali’s birthday and he deserves something scrumptious, no?

Yield: 1 pie

1 prepared pie crust, not cooked

Pre-heat oven to 375° and set cold dough on counter to warm. Do not set dough on the stove; it will get too warm and be difficult to work with.

2/3 cup sugar

1 cup corn syrup

3 eggs

1/3 cup melted butter

1 tsp vanilla

1/2 tsp salt

1 1/4 cup chopped pecans

Add sugar, corn syrup, eggs, butter, vanilla, and salt to a medium bowl. Mix on medium for 30 seconds or until well blended. Fold in pecans.

Put pie crust into un-greased pie tin and pinch edges. Cover a cookie sheet with foil and place pie tin on cookie sheet (to prevent spilling in the oven). Pour pecan mixture into pie shell. Bake at 375° for 40-50 minutes or until middle is set. Remove and cool before serving.

I overcooked the pie just a little bit. It did not look like it had set at 50 minutes, so I turned off the heat and kept it in the oven for another 5 minutes. I shouldn’t have done that. At 50 minutes remove the pie and let it finish setting outside of the oven. The edge of my crust is quite crispy and inedible, unless you are trying to break your teeth.

    Too funny – I assumed you had seen that movie before you started this project! I am really loving your blog…I struggle just to get dinner on the table every night. Can’t imagine blogging it too.
